Its aroma is often appealing, yet delicate, difficult to
characterize, easier to recognize. Like sponges, chardonnay grapes tend to soak up the influences ofboth vinification technique and appellation oforigin.Chardonnay might smell like apples, lemons,peaches or tropical fruits. Its delicacy is such thateven a small percentage of another varietal blendedinto a Chardonnay will often completely dominateits aroma and flavor. Oak commonly takes overChardonnay if the wine is fermented or aged in newbarrels or for too long in seasoned ones.
ASSYRTIKO: Wine style
One of the finest noble white grapes of Europe.The mineral profile of the grapes bodes well for blending and in recent times its has been blended often with Chardonnay, Sauvignon blanc, Sémillon and Malagousia. Assyrtiko grapes clusters are large, with transparent yellow-gold skin and juicy flesh. In the volcanic soil of Santorini, there appear to be some unique characteristics that develop in the grape variety, and therefore in the wine. One of these characteristics is that Assyrtiko does not lose its acidity even if it is very ripe. The winemakers who, by controlling the level of oxidation, can create darker wines with fig, coffee, kirsch and chocolate characteristics. Yet Assyrtico can also be made into a dry wine that is yellow-gold in colour with mineral, pear, apple and citrus blossom aromas and flavors.
Characteristics of “MANTEIO-ORACLE”:It comes from the Greek variety "Assyrtiko" blended with the French "Chardonnay".
